A multi-user operating system. Based on the earlier (1960's) operating system Multics ("MULTiplexed Information and Computing Service") which BellLabs felt was getting bloated, so they wrote their own system called Unix, which was "Multics without the balls" (or: "only one of whatever Multics was supposed to be a lot of").

UNIX was a registered trademark of AT and T (although this is now controlled by the XPG/X open people). This is why you might see some people refer to the free systems (such as Linux, and the *BSDs) as "unix-like" or "u*nix" (because they are not officially licensed to use the UNIX® registered trademark).
